Speaking of which, we highly recommend trying Soca, a traditional soup made with potatoes, cabbage, beans and black bread – perfect after a cold day on the slopes. Don't miss the chance to sample the local meat specialities either, such as boudin, a savoury sausage made from pig's blood, seasoned with spices and herbs and then served with lard and boiled potatoes, or the classic motsetta, dried goat or beef served as an appetiser. For cheese lovers, indulge in a tasting of local varieties like Beaufort, tome, and Fontina, either on their own or paired with polenta.
